Low Country Asado

Ok, I am not going to say I invented this, because I am sure a close variation has been done before. But this is my version of a Lowcountry Boil and a personal favorite of mine. I have done traditional Lowcountry Boils for friends, family and co-workers for years, but a while back I got the idea to do the whole thing with fire with the exception of the potatoes which I roast. I will say that this is a little less prep in that if you have a gas or charcoal grill there is no need to set up a gas unit to boil everything outdoors. If this is your 1st time reading about Lowcountry Boils, I would advise not doing the traditional one or this one indoors. Can you? Yes.

Ingredients:

1 cup Old Bay seasoning (approx.)

2-3 pounds small red potatoes (traditional) -or- I use Yukon gold, halved and quartered

1-2 pounds smoked sausage, cut into chunks

6-8 ears of corn, shucked and cut into halves or thirds

3-4 pounds large shrimp, peeled and deveined

3 sticks of unsalted butter melted and separated into 3 bowls.

Skewers for shrimp, sausage and onions

Lemon wedges and additional Old Bay seasoning for serving

Instructions:

Sausage and Onions

Slice the sausage in 2-3 inch links and slice the onions in half and then quarters. Add to skewers.

These can be done on the grill at medium and are done in 15 minutes with a turn every 3 minutes.

Potatoes

Preheat oven to 350. Add parchment or foil to sheet pan and spray with kitchen spray to prevent sticking

Slice and quarter potatoes and add to large bowl

Take one portion of melted butter and combine with half of seasoning and add to potatoes. Coat potatoes well.

Add to sheet pan.

Bake for 50 minutes

Corn

Shuck and clean corn and slice in half

Take one portion of melted butter and combine with seasoning to your preference and set aside

These will take approximately 15-20 minutes at high on the grill with a turn every 3 minutes.

Shrimp

Shell and clean the shrimp and add to skewers. Add 3rd portion of butter with a brush. Top with seasoning.

These will go on the grill at medium for 6-7 minutes total. Turn them over halfway.

So how do you have everything ready at once? See below:

Step 1- Start the potatoes in the oven for 50 minutes.

Step 2- After 15 minutes, light the grill and preheat for 10 minutes.

Step 3- Add the corn on high on one side and add the sausage/onion skewers on medium on the other side. Turn both every 3 minutes.

Step 4- After corn and sausage are done. Remove from grill and wrap in foil on a plate

Step 5- Add shrimp to grill and cook for 6-7 minutes total. Turn halfway.

Step 6- When these come off the grill, your potatoes should be minutes away from being done.

Serve together or on traditional newspaper. Enjoy!
